Oreo Halloween Cupcakes (and an Oreo Cake!)

It's Halloween time!!! Cupcakes were an obvious treat to make for the holiday and personally, I think these turned out fantastic. 

They are Oreo cupcakes with orange cream cheese frosting. I swear the crushed up Oreo cream that gets added to the cupcake batter makes the cupcakes that much more delicious.

HALLOWEEN OREO CUPCAKES

INGREDIENTS

  • Approx 1 1/2 packages Oreo Cookies
  • 1 package chocolate cake mix
  • Eggs and oil to make the cake mix
  • 8 ounces cream cheese, softened
  • 1/2 cup butter (1 stick), softened
  • 4 1/2 cups powdered sugar
  • 1 teaspoon orange extract
  • Orange food coloring
  • Black cupcake liners

DIRECTIONS

  1. Preheat oven to 350
  2. Mix together the cake mix according to package directions
  3. Put black cupcake liners in 24 cupcake tins
  4. Place one Oreo cookie in the bottom of each cupcake liner
  5. Crush up half a package of Oreo cookies in a Ziploc bag. Add the crushed up Oreos to the cake mix
  6. Put the Oreo cake mix in to each of the cupcake tins
  7. Bake according to package directions, approximately 19 minutes

Frosting

  1. While the cupcakes bake, mix up the frosting by softening the cream cheese and butter in the microwave and then creaming the two together.
  2. Add the orange extract
  3. Gradually add the 4 ½ cups powdered sugar, one cup at a time
  4. Add the orange food coloring until you get the color of orange you like
  5. Once the cupcakes are cool, frost them and enjoy!

While making these fun cupcakes I decided to go one step farther and make a Halloween Oreo cake - a mini cake that looks like one of the Halloween Oreos with an orange filling.  

I used the same batter and frosting and created this cute cake! 

HALLOWEEN OREO CAKE

INGREDIENTS

  • 1 package Oreo Cookies
  • 1 package chocolate cake mix
  • Eggs and oil to make the cake mix
  • 8 ounces cream cheese, softened
  • 1/2 cup butter (1 stick), softened
  • 4 1/2 cups powdered sugar
  • 1 teaspoon orange extract
  • Orange food coloring

DIRECTIONS

  1. Preheat oven to 350
  2. Mix together the cake mix according to package directions
  3. Crush up half a package of Oreo cookies in a Ziploc bag. Add the crushed up Oreos to the cake mix
  4. Put the Oreo cake mix in to four (or two if you just want one cake but you will have extra cake mix) 6” round cake pans that you have sprayed with Pam.
  5. Bake according to package directions (I baked mine for approximately 36 minutes)

Frosting

  1. While the cake bakes, mix up the frosting by softening the cream cheese and butter in the microwave and then creaming the two together.
  2. Add the orange extract
  3. Gradually add the 4 ½ cups powdered sugar, one cup at a time
  4. Add the orange food coloring until you reach the color of orange you like.

Creating the Cakes

  1. Once the cakes are cool, trim the tops to make them flat – you can throw away the excess cake or eat it plain.
  2. Frost one cake and then put another cake on the top of the frosting to create a cake that looks like an Oreo cookie with orange frosting.
