Chicken and Cheese Lasagna Roll Ups

I often pre-make lunches for my husband and I to use during the work week when it is my weekend. I make a full dinner and then pack them up in to tupperware containers as lunches so we can just grab them in the morning and go. Otherwise, we wouldn't have anything to eat for lunch. I made this recipe for one of these pre-made lunch meals once and my husband and I both loved it. I will definitely be making this again.

Here is how you can make this yourself:  


  • 2 pounds chopped cooked chicken
  • 1/2 cup milk
  • 2 cups Ricotta cheese
  • 1/4 teaspoon white pepper
  • 1/2 cup crumbled feta cheese
  • 12 lasagna noodles, cooked      and drained
  • 1/2 cup grated Parmesan      cheese
  • 2 cups Spaghetti Sauce


1.     Boil lasagna noodles with a little bit of butter

2.     While the lasagna noodles are boiling, clean chicken and cut in to pieces

3.     Pull lasagna noodles out of water with tongs and put on a plate for later

4.     Boil / cook the chicken pieces in the same water you used to boil the lasagna noodles

5.     Pull the chicken pieces apart to be small pieces once they are done boiling

6.     Mix together the chicken, cheeses, milk, and pepper

7.     Spread approximately 1/2 cup mixture on each lasagna noodle and roll the up in a jelly-roll fashion

8.     In a 9 x 13-inch baking dish, spread 1 cup spaghetti sauce

9.     Arrange lasagna rolls, seam-side down in sauce in baking dish

10.  Top with remaining spaghetti sauce

11.  Cover with tin foil

12.  Bake at 375 degrees for 30 minutes or until hot
