Chili Cheese Enchiladas

This is one of my go to recipes. It is very easy and I usually have the ingredients on hand. My husband doesn't like enchiladas but he likes these! So I keep making them. It is a dish my Mom made when I was young because we liked it as kids too. I hope your family enjoys it!

Ingredients:

  • 3 cans chili no beans
  • 1 can tomato sauce
  • 7 or 8 Large flour tortillas
  • Shredded cheddar cheese (I used a cheese mix)

Directions:

  1. Preheat the oven to 350 degrees
  2. Mix together the chili no beans, tomato sauce, and approximately 1 ½ to 2 cups cheese
  3. Put about a cup or so of the mixture in a tortilla and wrap it up like a burrito
  4. Place the burritos seam side down in a 9x13 inch pan
  5. Cover the burritos with the remaining chili mixture
  6. Bake uncovered for 20 minutes

The pan gets kind of messy, but these are so yummy and simple! Enjoy!
