Harvest Recipes Swap Meet - Paleo Sweet Potato Casserole

Hello all! My name is Kelli and I’m from Confections + Coffee! I’m super excited to be participating in the Food Blog Swap Meet and I just want to thank Kristin from Dizzy Busy and Hungry as well as Edward from If You Can Read, You Can Cook for putting this together.

The holiday season is probably one of my favorite parts of the year. You can cook and bake all day long because you get to make food for friends and family! It’s an endless fest of feasting, and it’s grand. I love cooking and baking for others. It’s that way I give generously to people I love.

Thanksgiving is coming and it’s one of the biggest family holidays. I see more people on Thanksgiving than I do on Christmas! With more people there is always more food and with more food there is always a 100% chance of overeating. I always, always overeat on Thanksgiving. To the point of no return. I usually don’t eat the day after, either. It’s pretty bad.

So this year I am determined to not stuff myself like the turkey on the table, and to work on portion control and what I eat in general. I usually devour a huge helping of candied yams, but this year I decided to bring my own healthy sweet potato dish that anyone can eat, regardless of their dietary restrictions.

This dish is so simple and so tasty that people will be coming back for seconds and thirds, if there is any left! This recipe calls for 8 ingredients, most of which you should have in stock. It’s also dairy-free, sugar-free, gluten-free, grain-free, and is considered paleo. It is creamy and sweet with a cinnamon pecan topping. You just can’t go wrong! Enjoy this guilt free side dish and you can enjoy that extra slice of pie later on in the evening.
