my own salsa always seemed a little bit overwhelming to me, but one
evening I wanted some salsa and we didn't have any but we had plenty of
fresh vegetables so I went for it!
It was nothing like I thought it would be; all I had to do was chop, chop, chop and mix everything together! My husband and I loved it! It came out of the fridge a few times that night and it was nearly gone by the end of the evening.
- 3 tomatoes, diced
- 1/2 onion, diced
- 5 mild chilies, diced (seeds removed)
- 3/4 a bundle of cilantro, chopped
- 1 green bell pepper, diced
- 3 cloves garlic, diced
- 1 teaspoon salt
- 2 teaspoons lime juice (I might have used 3 tsp or so...)
In a medium bowl, stir together tomatoes, onion, chiles, cilantro, bell pepper, garlic, salt and lime juice. Chill for one hour in the refrigerator before serving; this allows all the flavors to mix together and a little liquid to form so the salsa is not quite so chunky (which I personally like).
You can also add pretty much any delicious, fresh chopped veggies that you want and it will most likely be good.
